Baked Mushroom & Cauliflower Gratin

– 1 lb cremini mushrooms, wiped clean and sliced
– 1 head cauliflower, cut into small florets
– 1 medium onion, diced
– 3 cloves garlic, minced
– 1 tbsp olive oil
– 1/2 cup unsweetened almond milk
– 1/4 cup grated Parmesan
– 1/4 tsp smoked paprika
– 1/4 tsp salt
– 1/8 tsp black pepper
– 1/4 tsp dried thyme
– 1/2 cup shredded low-fat cheddar (optional)

Directions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, sauté mushrooms and onion in olive oil until golden, about 5 minutes.
  3. Add garlic and cook for 1 minute. Stir in cauliflower and cook for 3 minutes.
  4. Transfer mixture to the prepared dish. Pour almond milk, Parmesan, paprika, salt, pepper, and thyme over the top.
  5. Bake for 25–30 minutes, or until bubbly and golden. If using cheddar, sprinkle it over the top and bake for an additional 5 minutes.
