These Shiitake Mushroom Bites are a crunchy, flavorful snack that highlights the earthy, umami-rich qualities of shiitake mushrooms. With minimal oil and a quick air-fryer cook time, they’re a healthy, satisfying alternative to fried snacks. Pair them with a dipping sauce or enjoy as a light appetizer.

Ingredients

Mushrooms & Base
– 12 oz (340g) shiitake mushrooms, stems removed, caps sliced
– 1/4 cup (30g) breadcrumbs
– 1 tbsp (15g) grated Parmesan cheese
– 1 tsp (5g) dried parsley
– 1/2 tsp (2.5g) garlic powder
– 1/2 tsp (2.5g) onion powder
– 1/4 tsp (1.25g) black pepper
– 1/4 tsp (1.25g) smoked paprika (optional)

Coating (Optional)
– 1/4 cup (30g) all-purpose flour
– 1/4 tsp (1.25g) salt
– 1/4 tsp (1.2,5g) cayenne pepper (optional)

Directions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, mix breadcrumbs, Parmesan, parsley, garlic powder, onion powder, black pepper, and smoked paprika.
  3. Toss shiitake slices in the breadcrumb mixture until evenly coated.
  4. Place mushrooms in a single layer in the air fryer basket, making sure they’re not overlapping.
  5. Air fry for 10–12 minutes, shaking the basket halfway through, until golden and crispy.
  6. If using a flour coating, repeat steps 2–5, adjusting cooking time as needed.

  • For extra crispiness, pat mushrooms dry before coating.
  • Use a parchment paper liner to prevent sticking and make cleanup easier.
  • Store leftovers in an airtight container for up to 3 days.
