Directions
- Preheat oven to 375°F (190°C). Place mushroom caps on a baking sheet and roast for 10 minutes, or until lightly browned.
- In a bowl, mix quinoa, feta, sun-dried tomatoes, olives, spinach, parsley, Parmesan, breadcrumbs, garlic, salt, and pepper.
- Stuff each mushroom cap with the mixture, pressing gently to pack it in.
- Return to the oven and bake for 20–25 minutes, or until the filling is heated through and the caps are tender.
