Sauce & Finish

– 1/4 cup plain Greek yogurt (for tang)
– 1 tbsp Worcestershire sauce
– 1 tsp Dijon mustard
– 1/2 tsp paprika
– Salt and pepper to taste

Directions

  1. Heat butter and oil in a large skillet over medium heat. Add mushrooms and sauté until golden and tender, about 5–7 minutes.
  2. Add onion and garlic, cooking until softened, about 3 minutes.
  3. Add beef or tofu, breaking it up with a spoon, and cook until browned and cooked through, about 5 minutes.
  4. Stir in broth, Worcestershire, Dijon, paprika, salt, and pepper. Bring to a simmer and let cook for 10 minutes.
  5. Stir in Greek yogurt and sour cream, mixing well to combine. Cook for 2–3 minutes until slightly thickened.
  6. Taste and adjust seasoning. Serve immediately over cooked pasta or rice.
