Miso Mushroom Ramen

Ingredients

Mushrooms & Base
– 8 oz (225g) shiitake mushrooms, sliced
– 1 tbsp (15g) miso paste (white or red)
– 1 tbsp (15ml) soy sauce
– 1 tbsp (15ml) mirin or rice vinegar
– 1 tbsp (15g) sesame seeds
– 2 cups (475ml) vegetable broth or water
– 1/2 tsp (2.5g) grated ginger
– 1 tsp (5g) minced garlic

Noodles & Toppings
– 2 servings ramen noodles (or udon, soba, or spaghetti)
– 1 green onion, sliced
– 1 tbsp (15g) chopped scallions
– 1 tbsp (15ml) toasted sesame oil
– Optional: 1 tbsp (15g) chopped cilantro or parsley

Directions

  1. Heat 1 tbsp sesame oil in a large pot or pan over medium heat. Add sliced shiitake mushrooms and sauté for 5–7 minutes until softened and golden.
  2. Add 1/2 tsp grated ginger, 1 tsp minced garlic, and 1 tbsp soy sauce. Stir to coat and cook for 1–2 minutes.
  3. Pour in 2 cups vegetable broth and bring to a gentle simmer. Add ramen noodles and cook according to package instructions, usually 3–5 minutes.
  4. In a small bowl, mix miso paste, 1 tbsp mirin or rice vinegar, and 1 tbsp soy sauce. Stir until miso dissolves.
  5. Once noodles are al dente, stir in the miso mixture. Cook for 1–2 minutes until warmed through.
  6. Divide ramen into bowls, top with green onion, scallions, and additional sesame seeds. Drizzle with remaining sesame oil and enjoy.

Tips

  • For extra depth, roast the shiitake mushrooms in the oven at 400°F (200°C) for 15–20 minutes before sautéing.
  • Use a high-quality miso paste for the best umami flavor.
  • If you prefer a creamier broth, add a splash of coconut milk or a splash of soy creamer.
