– 4 oz (113 g) dried Turkey Tail mushrooms (or 1 cup fresh, rehydrated)

– 1 cup (240 ml) chopped carrots
– 1 cup (240 ml) chopped celery
– 1 cup (240 ml) chopped parsnips
– 1 cup (240 ml) chopped mushrooms (shiitake, oyster, or button for variety)
– 1 tsp (5 g) sea salt
– 1 tsp (5 ml) black pepper
– 1 tsp (5 ml) ground turmeric
– 1 cup (240 ml) water or vegetable broth
– 1 tbsp (15 ml) olive oil

Directions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, celery, parsnips, and mushrooms. Sauté for 5 minutes until fragrant.
  2. Add Turkey Tail mushrooms, sea salt, black pepper, and turmeric. Stir to coat. Pour in water or broth and bring to a gentle simmer.
  3. Reduce heat to low, cover, and let simmer for 45 minutes. Skim any foam that rises to the surface.
  4. Use a fine mesh strainer to remove solids. Serve warm, optionally with a splash of lemon juice or a drizzle of olive oil.
