Sheet-Pan Balsamic Mushrooms & Chicken

Ingredients

Mushrooms & Chicken
– 1 lb cremini mushrooms, stems trimmed and sliced
– 1.5 lbs chicken thighs (bone-in, skin-on for juiciness)
– 2 tbsp olive oil
– 1 tbsp balsamic vinegar
– 1 tbsp honey
– 1 tsp Dijon mustard
– 1 tsp garlic powder
– 1/2 tsp smoked paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/4 cup chopped fresh parsley

Directions

  1. Preheat oven to 400°F (200°C).
  2. On a large sheet pan, arrange chicken thighs and spread mushroom slices around them.
  3. Drizzle olive oil over the chicken and mushrooms, then sprinkle with salt, pepper, garlic powder, smoked paprika, and Dijon mustard.
  4. Roast for 25–30 minutes, or until chicken is fully cooked (internal temperature of 165°F / 74°C) and mushrooms are tender and golden.
  5. In the last 5 minutes of cooking, drizzle balsamic vinegar and honey over the top, then stir gently to coat.
  6. Remove from oven, garnish with parsley, and serve warm.
