– 4 cups (about 100g) bok choy, stemmed and sliced
– 1 tbsp (15ml) sesame oil
– 1 tbsp (15ml) soy sauce
– 1 tbsp (15ml) rice vinegar
– 1 tsp (5ml) maple syrup or honey
– 1/2 tsp (2.5ml) grated ginger
– 1/4 tsp (1.25ml) sriracha (optional)
Noodles & Base
– 8 oz (225g) cooked ramen or soba noodles (or any Asian-style noodles)
– 1/4 cup (60ml) low-sodium chicken or vegetable broth
– 1 tbsp (15ml) cornstarch mixed with 2 tbsp (30ml) water (for sauce)
Directions
- Heat a large skillet or wok over medium-high heat. Add sesame oil and swirl to coat.
- Add shiitake mushrooms and sauté for 5–7 minutes until softened and golden.
- Add bok choy, ginger, and soy sauce. Stir-fry for 3–5 minutes until bok choy is tender-crisp.
- In a small bowl, mix rice vinegar, maple syrup, sriracha (if using), and cornstarch-water slurry.
- Pour the sauce into the skillet, stirring to coat the vegetables. Cook for 2–3 minutes until thickened.
- Toss cooked noodles into the skillet, stirring to combine. Cook for 2–3 minutes until heated through.
Tips
- For extra flavor, roast the shiitake mushrooms at 400°F (200°C) for 15–20 minutes before adding to the pan.
- Use fresh bok choy for the best texture; if using frozen, thaw and drain well before adding.
