– 1/2 tsp garlic powder
– 1/4 tsp salt
– 1/4 tsp black pepper

Ricotta & Toppings
– 1/2 cup part-skim ricotta cheese
– 1 tbsp fresh parsley, chopped
– 1 tbsp lemon juice
– 1/4 tsp nutmeg (optional)

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix ricotta, parsley, lemon juice, and nutmeg (if using). Set aside.
  3. On a baking sheet, arrange bread slices. Top each with mushroom slices, garlic powder, salt, and pepper. Drizzle with olive oil.
  4. Bake for 10–12 minutes, or until bread is golden and mushrooms are tender.
  5. Spread ricotta mixture over warm toast and serve immediately.

Tips

  • For extra crunch, toast the bread slices in a toaster before adding mushrooms.
  • Use a mix of fresh and dried herbs for a more complex flavor.
  • Substitute ricotta with cottage cheese if preferred.
  • Pair with a side of fruit or a green salad for a complete meal.

Nutritional Benefits

  • Cremini Mushrooms: Low in calories, high in B vitamins, and rich in antioxidants and fiber.

Storage & Reheating

  • Store leftover ricotta mixture in an airtight container in the refrigerator for up to 2 days.
  • Reheat toast in a toaster or oven at 350°F (175°C) for 5–7 minutes.
