Sheet-Pan Balsamic Mushrooms & Chicken

Ingredients
Mushrooms & Chicken
– 1 lb cremini mushrooms, stems trimmed and sliced
– 1.5 lbs chicken thighs (bone-in, skin-on for juiciness)
– 2 tbsp olive oil
– 1 tbsp balsamic vinegar
– 1 tbsp honey
– 1 tsp Dijon mustard
– 1 tsp garlic powder
– 1/2 tsp smoked paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/4 cup chopped fresh parsley
Directions
- Preheat oven to 400°F (200°C).
- On a large sheet pan, arrange chicken thighs and spread mushroom slices around them.
- Drizzle olive oil over the chicken and mushrooms, then sprinkle with salt, pepper, garlic powder, smoked paprika, and Dijon mustard.
- Roast for 25–30 minutes, or until chicken is fully cooked (internal temperature of 165°F / 74°C) and mushrooms are tender and golden.
- In the last 5 minutes of cooking, drizzle balsamic vinegar and honey over the top, then stir gently to coat.
- Remove from oven, garnish with parsley, and serve warm.
