Lion’s Mane & Base
– 1 cup chopped Lion’s Mane mushrooms
– 1/2 cup breadcrumbs (preferably gluten-free if needed)
– 1/4 cup finely chopped green onion
– 1/4 cup finely chopped parsley
– 1/4 cup mayonnaise
– 1/4 cup sour cream
– 1/4 tsp garlic powder
– 1/4 tsp smoked paprika
– 1/4 tsp black pepper
– 1/4 tsp salt
– 1/2 cup all-purpose flour (or gluten-free alternative)
– 2 large eggs, lightly beaten
– 1/2 cup buttermilk or milk
– 1/4 cup olive oil or vegetable oil
Directions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix chopped Lion’s Mane, green onion, parsley, mayonnaise, sour cream, garlic powder, smoked paprika, and black pepper.
- In another bowl, combine flour, eggs, and buttermilk. Stir until well blended.
- Fold the wet ingredients into the mushroom mixture until well combined.
- Shape the mixture into 4 equal patties.
- Place the patties on the prepared baking sheet and brush lightly with oil.
- Bake for 20-25 minutes, or until golden and cooked through.

- For extra crispiness, bake the cakes on a wire rack placed over the baking sheet.
