– 8 oz (225g) button mushrooms, quartered
– 8 oz (225g) shiitake mushrooms, sliced (or more cremini)
– 1 tbsp olive oil
– 1 small onion, diced
– 3 garlic cloves, minced
– 1 cup (240ml) dry red wine (like Pinot Noir)
– 2 cups (480ml) beef or vegetable broth
– 2 tbsp all-purpose flour (or cornstarch for gluten-free)
– 1 tsp thyme
– 1 bay leaf
– Salt and pepper to taste
– 1 tbsp butter (optional, for richness)
Directions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened, about 5 minutes.
- Add mushrooms, stir to coat in fat, and cook until they release their moisture and begin to brown, about 10 minutes.
- Stir in flour, thyme, and bay leaf. Cook for 1 minute to create a roux.
- Pour in red wine, stirring to deglaze the pot. Add broth, bring to a simmer, and cook for 45 minutes.
- Remove bay leaf. Season with salt and pepper. Serve hot, optionally with a dollop of yogurt or sour cream.
Tips
- For a deeper flavor, roast the mushrooms in the oven at 400°F (200°C) for 15–20 minutes before adding to the pot.
