Creamy Mushroom & Wild Rice Soup

This rich and satisfying soup features cremini mushrooms, which lend a deep, earthy umami flavor and a meaty texture. The creamy base is made with just a splash of heavy cream and a touch of butter, while wild rice adds a nutty complexity and a healthy dose of fiber. Perfect for a cozy, comforting meal.

Servings: 4 · Prep: 15 min · Cook: 45 min

Ingredients

Mushrooms & Base
– 1 cup dry wild rice
– 1 tbsp unsalted butter
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 8 oz cremini mushrooms, sliced
– 1 tbsp all-purpose flour
– 4 cups chicken or vegetable broth
– 1/2 cup heavy cream
– 1/4 tsp thyme (fresh or dried)
– Salt and pepper to taste

Optional Garnish
– Chopped fresh parsley
– A drizzle of cream or olive oil

Directions

  1. In a large pot, sauté the onion and garlic in butter until softened, about 3 minutes.
  2. Add the sliced mushrooms and cook until they begin to brown and release their moisture, about 5 minutes.
  3. Stir in the flour to create a roux, then gradually whisk in the broth to form a smooth sauce.
  4. Add the wild rice, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer, covered, for 35–40 minutes or until the rice is tender.
  5. Stir in the heavy cream and heat through, ensuring the soup is creamy and well combined. Serve warm.

Tips

  • For a lighter version, substitute half-and-half or a plant-based cream alternative for the heavy cream.
  • If the soup becomes too thick, add a bit more broth or water to reach your desired consistency.
  • Wild rice can be found in the grain section of most supermarkets or in the specialty section.

Nutritional Benefits

  • Wild rice: High in fiber, antioxidants, and B vitamins.
  • Cremini mushrooms: Rich in B vitamins, selenium, and potassium.
  • Butter: Provides healthy fats and enhances flavor.
  • Heavy cream: Adds creaminess and a source of calcium and vitamin A.

Storage & Reheating

  • Store leftover soup in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
  • When reheating, gently warm over low heat on the stove, stirring frequently to maintain creaminess. Avoid boiling to prevent curdling.
