Ingredients

– 1½ cups (120g) cremini mushrooms, finely chopped
– 1 small onion, finely diced
– 3 cloves garlic, minced
– 1½ cups (300ml) dry white wine (dry vermouth optional)
– 4 cups (960ml) vegetable broth, warmed
– 1 tbsp olive oil
– 1 tbsp unsalted butter
Barley & Seasoning
– 1 cup (120g) pearl barley, rinsed
– 1 tsp fresh thyme leaves (or ½ tsp dried)
– ½ tsp sea salt
– ¼ tsp black pepper
– 1 tbsp chopped fresh parsley, for garnish
Directions
- Heat olive oil and butter in a large heavy pot over medium heat.
- Sauté onions and garlic until fragrant, about 3 minutes.
- Add chopped mushrooms and cook until softened and golden, about 5 minutes.
- Stir in rinsed barley, thyme, salt, and pepper. Cook for 2 minutes to toast the barley.
- Deglaze the pot with white wine, stirring until most of the liquid is absorbed.
- Gradually add warmed vegetable broth, one ladle at a time, stirring frequently. Cook until the barley is tender, about 25–30 minutes.
- Finish with chopped parsley and serve warm.
