Ingredients

Mushrooms & Base
– 12 oz (340g) fresh oyster mushrooms, cleaned and trimmed
– 1 small onion, diced
– 2 cloves garlic, minced
– 1/4 cup (60ml) olive oil
– 1/4 tsp smoked paprika
– 1/4 tsp cumin
– 1/4 tsp chili powder (or to taste)
– 1/4 tsp sea salt
– 1/4 tsp black pepper

Tortillas & Toppings
– 8 small corn tortillas
– 1/4 cup (40g) crumbled feta cheese (optional)
– 1/4 cup (40g) chopped fresh cilantro
– 1/4 cup (40g) diced green onions
– Juice of 1 lime
– 1/4 cup (60ml) plain Greek yogurt or sour cream (optional)

Directions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for 3-4 minutes until softened.
  2. Add oyster mushrooms, season with paprika, cumin, chili powder, salt, and pepper. Cook for 8-10 minutes, stirring occasionally, until mushrooms are tender and golden.
  3. Warm tortillas in a dry skillet or microwave until pliable.
  4. Top each tortilla with a portion of the mushroom mixture, feta cheese, cilantro, green onions, and a drizzle of lime juice. Add yogurt if desired.
  5. Serve immediately, or warm briefly before eating.
