Ingredients

Mushrooms
– 1 tbsp dried Cordyceps (rehydrated, see Tips)
– 1 tbsp raw shiitake mushrooms (optional, for added umami)

Base & Boosters
– 1 cup unsweetened almond milk (or any plant-based milk)
– 1/2 cup frozen spinach
– 1/2 cup frozen mango or banana
– 1 tbsp chia seeds
– 1 tbsp ground flaxseeds
– 1 tsp raw honey or maple syrup (optional)
– 1/2 tsp cinnamon
– 1/4 tsp turmeric (optional)

Directions

  1. Rehydrate the Cordyceps by soaking in warm water for 10–15 minutes, then drain and add to a blender.
  2. Add the almond milk, spinach, frozen fruit, chia seeds, flaxseeds, honey (if using), cinnamon, and turmeric.
  3. Blend on high speed until smooth and creamy, about 1–2 minutes. Adjust consistency with more milk if needed.

Tips

  • For a richer flavor, use a high-quality Cordyceps product and soak it thoroughly before blending.
  • If using shiitake mushrooms, sauté them briefly in a pan with a little oil before adding to the smoothie for enhanced flavor.
  • For a warming twist, add a pinch of nutmeg or a splash of ginger tea.
