Ingredients
Mushrooms
– 1 tbsp dried Cordyceps (rehydrated, see Tips)
– 1 tbsp raw shiitake mushrooms (optional, for added umami)
Base & Boosters
– 1 cup unsweetened almond milk (or any plant-based milk)
– 1/2 cup frozen spinach
– 1/2 cup frozen mango or banana
– 1 tbsp chia seeds
– 1 tbsp ground flaxseeds
– 1 tsp raw honey or maple syrup (optional)
– 1/2 tsp cinnamon
– 1/4 tsp turmeric (optional)
Directions
- Rehydrate the Cordyceps by soaking in warm water for 10–15 minutes, then drain and add to a blender.
- Add the almond milk, spinach, frozen fruit, chia seeds, flaxseeds, honey (if using), cinnamon, and turmeric.
- Blend on high speed until smooth and creamy, about 1–2 minutes. Adjust consistency with more milk if needed.
Tips
- For a richer flavor, use a high-quality Cordyceps product and soak it thoroughly before blending.
- If using shiitake mushrooms, sauté them briefly in a pan with a little oil before adding to the smoothie for enhanced flavor.
- For a warming twist, add a pinch of nutmeg or a splash of ginger tea.
