– 1 tbsp all-purpose flour (to thicken)
– 1 tsp fresh thyme leaves or 1/2 tsp dried thyme
– Salt and freshly ground black pepper, to taste
– 1/4 cup (60ml) unsweetened almond milk (for lightness, optional)
Directions
- Heat butter in a large pot over medium heat. Add onions and garlic, sauté until softened, about 3–4 minutes.
- Add sliced mushrooms, cook until they release their moisture and begin to brown, about 8–10 minutes.
- Stir in flour, thyme, salt, and pepper. Cook for 1 minute to toast the flour.
- Pour in broth, stirring to combine. Bring to a simmer, then cook for 15 minutes.
- Whisk in cream or coconut milk, and cook for another 5 minutes until soup thickens.
- Taste and adjust seasoning. Serve warm.

- For a deeper flavor, roast the mushrooms in the oven at 400°F (200°C) for 15 minutes before adding to the soup.
