– 1 tsp smoked paprika
– 1/2 tsp turmeric (optional, for color and mild bitterness)
– 1/2 cup vegetable broth

Finish
– 1/4 cup chopped fresh parsley
– Juice of 1 lemon
– Salt and pepper to taste

Directions

  1. Preheat oven to 425°F (220°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened, about 3 minutes.
  3. Add mushrooms, season with paprika, turmeric, salt, and pepper. Cook for 5 minutes, stirring occasionally, until slightly browned.
