Easy Healthy Mushroom Chicken Pasta

- 1 tbsp flour
- 1 tbsp butter

Directions
- Cook the pasta. Bring a pot of salted water to a boil. Add 8 oz dry pasta and cook to al dente. Before draining, save ½ cup pasta water. Drain and set aside. Pasta water helps the sauce cling to the noodles instead of sitting there like soup with commitment issues.
- Season the chicken. Pat 2 large chicken breasts dry. If thick, slice horizontally into thinner cutlets. Season both sides with ½ tsp salt, ½ tsp black pepper, ½ tsp Italian seasoning, and ½ tsp smoked paprika (optional).
- Pan-fry the chicken. Heat a large skillet over medium heat with 1 tbsp olive oil or butter. Cook chicken uncovered 5 to 7 minutes per side, until it reaches 165°F internal temperature. Remove to a plate and rest 5 minutes, then slice. Resting keeps the chicken juicy instead of leaking all over the cutting board like evidence.
- Cook the mushrooms. In the same skillet add 1 tbsp olive oil or butter and 8 to 12 oz sliced mushrooms. Cook uncovered 6 to 8 minutes, stirring occasionally, until browned. Let them release their moisture first, then keep going until they get color.
- Build the sauce. Add 1 tbsp butter, 4 cloves minced garlic, and ½ small diced onion (optional). Cook 60 to 90 seconds, stirring constantly. Sprinkle in 1 tbsp flour and stir 1 minute to cook off the raw taste. Add 1½ cups chicken broth, 1 to 2 tbsp mushroom powder, and ½ tsp Italian seasoning. Whisk until smooth and simmer uncovered 4 to 6 minutes until slightly thickened.
- Make it creamy. Turn heat to low. In a small bowl, mix ½ cup plain Greek yogurt with 2 to 3 tbsp hot sauce from the pan until smooth (this tempers the yogurt). Stir it back into the skillet. Add ¼ cup grated parmesan, 1 tbsp lemon juice (optional), and up to ¼ cup reserved pasta water only if too thick. Stir gently over low heat 1 to 2 minutes. Do not boil after adding the yogurt, or the sauce can split.
- Combine everything. Add the cooked pasta and toss until coated. Add the sliced chicken on top or stir it in. Cook together over low heat 1 to 2 minutes. Taste and adjust with more salt, pepper, parmesan, or lemon juice.
