Ingredients
Mushrooms & Base
– 1 lb cremini mushrooms, sliced
– 1 tbsp butter
– 1 tbsp olive oil
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 cup beef or vegetable broth
Protein (optional)
– 1 lb lean ground beef or tofu, crumbled (for beef) / crumbled (for tofu)
Sauce & Finish
– 1/2 cup sour cream or plain Greek yogurt (full-fat for creaminess)
– 1/4 cup plain Greek yogurt (for tang)
– 1 tbsp Worcestershire sauce
– 1 tsp Dijon mustard
– 1/2 tsp paprika
– Salt and pepper to taste
Directions
- Heat butter and oil in a large skillet over medium heat. Add mushrooms and sauté until golden and tender, about 5–7 minutes.
- Add onion and garlic, cooking until softened, about 3 minutes.
- Add beef or tofu, breaking it up with a spoon, and cook until browned and cooked through, about 5 minutes.
- Stir in broth, Worcestershire, Dijon, paprika, salt, and pepper. Bring to a simmer and let cook for 10 minutes.
- Stir in Greek yogurt and sour cream, mixing well to combine. Cook for 2–3 minutes until slightly thickened.
- Taste and adjust seasoning. Serve immediately over cooked pasta or rice.
Tips
- For a lighter version, use vegetable broth and skip the beef, or substitute tofu for a plant-based option.
- To enhance the umami, add a splash of soy sauce or a teaspoon of mushroom powder after cooking.
- If the sauce is too thick, add a bit of broth or water to reach your desired consistency.
Nutritional Benefits

Storage & Reheating
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
